All In One Victoria Sponge

For me this is the best sponge of all, and should work even if you’ve never made a cake before in your life.

Method

  1. Pre heat the oven to 170C or gas mark 3.
  2. Lightly grease two 7 inch (18cm) sponge tins at least 1 inch (2.5cm) deep and line with greaseproof paper.
  3. In a large bowl, add all the ingredients, and whisk until thoroughly combined.
  4. Add 1 or 2 tsp of water if necessary.
  5. Divide the mix between the two tins and bake for 30 minutes.
  6. Remove from tins while still warm then fill with fresh cream and jam.
