Bacon and Lentil Soup
Serve this hearty soup with chunks of warm, crusty bread.
Serves 4
Ingredients
- 450g of thick bacon, diced
- 1 onion, roughly chopped
- 1 small turnip, roughly chopped
- 1 celery stick, roughly chopped
- 2 carrot, sliced
- 1 potato, peeled and chopped
- 75g of lentils
- Herbs
- Black pepper
Method
- Heat a large pan and cook the bacon, allowing the fat to run out.
- Add all the vegetables and cook for 5 minutes.
- Add the lentils, herbs, seasoning and enough water to cover.
- Bring to a boil and simmer for 1 hour or until the lentils are tender.
- Optionally blend and server
