Healthy Roast Chicken
Gorgeous roast chicken and vegetables with all the taste but healthier!
Serves 6
Ingredients
- 1 lemon
- 2 sprigs of rosemary, chopped
- 2 sprigs of thyme, chopped
- 6-8 cloves of garlic, chopped
- 1 tbsp of olive oil
- 1 whole chicken
- 300g of potatoes
- 5 carrots
- 2 red onions
- 250ml of white wine
Method
- Preheat oven to 220C or gas mark 7
- Finely grate lemon zest into a bowl and add the rosemary, garlic, oil and a pinch of salt and pepper.
- Rub the mix under the chicken skin and put the rest of the lemon inside the chicken.
- Roast for 20 minutes and then turn down to 190C or gas mark 5 and roast for another 50 minutes.
- Place the potatoes and vegetables, onions and garlic into a roasting tray. Season with salt and pepper, and sprinkle with olive oil. Roast for an hour.
- Pour the meat juices from the tray into a pan. Add the wine while stirring quickly. Use as gravy.
