Healthy Roast Chicken

Gorgeous roast chicken and vegetables with all the taste but healthier!

Method

  1. Preheat oven to 220C or gas mark 7
  2. Finely grate lemon zest into a bowl and add the rosemary, garlic, oil and a pinch of salt and pepper.
  3. Rub the mix under the chicken skin and put the rest of the lemon inside the chicken.
  4. Roast for 20 minutes and then turn down to 190C or gas mark 5 and roast for another 50 minutes.
  5. Place the potatoes and vegetables, onions and garlic into a roasting tray. Season with salt and pepper, and sprinkle with olive oil. Roast for an hour.
  6. Pour the meat juices from the tray into a pan. Add the wine while stirring quickly. Use as gravy.
