Slow Cooker Chicken Casserole
Treat the family to this wholesome chicken casserole that delivers comfort while being low-fat. And you can let a slow cooker do most of the work.

Ingredients
- Knob of butter
- 1/2 tbsp of oil
- 1 large onion, finely chopped
- 1 1/2 tbsp of flour
- 650g chicken thighs/breasts
- 3 garlic cloves
- 400g of potatoes, halved
- 2 carrots, diced
- 250g of mushrooms, quartered
- 500ml of chicken stock
- 2 tsp of Dijon mustard
- 2 bay leaves
Method
- Heat the butter and oil in a frying pan, cook the onion for 5-10 minutes.
- Meanwhile, put the flour, salt and a pinch of black pepper in a bowl and toss the chicken in it.
- Add the garlic and chicken to the pan and cook for 4-5 mins more until the chicken starts to brown.
- Transfer to the slow cooker, along with the potatoes, carrots, mushrooms, stock, mustard and bay leaves.
- Stir and leave on cook for 7 hours on low or 4 on high.
- Remove the bay leaves and serve.
