Spicy Fried Potatoes
Give fried potatoes a hint of heat by tossing them with spiced vinegar. Sliced peppers add a splash of colour.
Serves 4
Ingredients
- 2 garlic cloves.
- 1/2 tsp of crushed chillies.
- 1/2 tsp of ground cumin.
- 2 tsp of paprika.
- 2 tbsp of red or white wine vinegar.
- 675g of potatoes.
- 5 tbsp of olive oil.
- 1 bell pepper.
Method
- Mix the garlic, chillies and cumin in a mortar, then stir in the paprika and vinegar.
- Boil the potatoes in a pan for about 15 minutes. Drain and cut into chunks.
- Heat the oil in a large frying pan and fry the potatoes until golden.
- Add the spice mixture, along with the cut pepper and cook for 2 minutes.
- Season with salt and serve.
